Prenzel Wine Stocks

Prenzel Vincon began as a request from executive chefs to create a reduced winestock. The result is a concentrate that contains four times the flavour of table wine without the alcohol or need for time-consuming reductions. Vincon can replace wine in cooking by one quarter of what a recipe calls for. Casseroles, sauces, vinaigrettes, marinades and desserts are easy to make and full of flavour. Alcohol free, they provide the aroma, fruit character and colour of real wine. They do not need refrigeration and once open will keep for six months. Available in red and white varieties.

 

VINCON RED WINE VINAIGRETTE

1/4 cup Prenzel Vincon Red Wine Concentrate
3 tablespoons white wine vinegar
1 teaspoon each: mixed dried herbs, sugar, Dijon-style mustard
1/4 cup olive oil

 

Whisk the red wine concentrate, vinegar, herbs, sugar and mustard in a small bowl. Gradually whisk in the olive oil. Serve over salads.

Makes about 1/2 cup.
