Apricots with clusters

 

75g butter
1/4 cup flour
1/4 teaspoon each, ground: cinnamon, ginger, nutmeg
pinch each: ground cloves, salt
3 (packed) tablespoons dark cane sugar
1/3 cup quick-cooking rolled oats
1/3 cup chopped walnuts
6 large apricots
1 tablespoon lemon juice

2 tablespoons sugar
 

Preheat the oven to 180°C.

 

Melt the butter and let cool. Mix together the  flour, spices, salt and brown sugar in a bowl. Stir in the rolled oats and walnuts. Stir in the melted butter.

 

Halve and stone the apricots. Place in a baking dish. Drizzle with the lemon juice and sprinkle with the sugar.

 

Squeeze the topping into clumps and scatter over the apricots.

 

Bake until bubbling, about 30-40 minutes. Cool slightly and serve with whipped cream or ice cream. Serves 4.
