Gluten-free Christmas Ring Cake

 

This cake is suitable for people on wheat and gluten-free diets.

 

125g butter, softened
1/2 cup firmly pack dark cane sugar
2 large eggs, lightly beaten
2 tablespoons marmalade
3/4 cup each: raisins or craisins, sultanas
1/2 cup each: red and green glacé cherries, chopped, ground almonds
3/4 cup gluten-free baking mix
1/2 teaspoon each ground cinnamon, nutmeg

 

Preheat the oven to 150°C. Line the base and sides of an 18-20cm-ring pan with baking paper.

 

Beat the butter and sugar with an electric mixer, until well combined. Add the eggs a little at a time, beating continuously.

 

Stir in the marmalade, dried fruit, ground almonds and sifted flour and spices. Spread into the prepared pan.

 

Bake for 1 hour or until a skewer inserted in the centre comes out clean. Cover with foil and cool in the pan. Can be drizzled with a butter icing if required. Store in a cool place. Can be frozen.
