Preheat the oven to 150°C. Line the base and sides of an 18-20cm-ring pan with baking paper.
Beat the butter and sugar with an electric mixer, until well combined. Add the eggs a little at a time, beating continuously.
Stir in the marmalade, dried fruit, ground almonds and sifted flour and spices. Spread into the prepared pan.
Bake for 1 hour or until a skewer inserted in the centre comes out clean. Cover with foil and cool in the pan. Can be drizzled with a butter icing if required. Store in a cool place. Can be frozen. |
