URBAN BISTRO Lobster Mayonnaise

 

This mayonnaise is excellent served with any seafood.

 

 

Flavoured Oil:
1 lobster shell or 6 (empty) prawn shells  
2 ¼ teaspoons smoked paprika
2 teaspoons each: caster sugar, tomato paste
1 each: small onion, bay leaf, large garlic clove
¾ cup canola oil

 

Mayo:
2 egg yolks
2 tablespoons cider vinegar
2 teaspoons each: caster sugar, Dijon-style mustard
1 cup canola oil
100ml flavoured oil (from above)

 

Place all the ingredients for the flavoured oil in a small saucepan and bring to the boil, Simmer on low heat for 10 minutes. Cool then strain through a fine sieve.

 

To make the mayonnaise, whisk the egg yolks, vinegar, sugar and mustard, until smooth. Gradually whisk in the oils until very thick. Chill.

 

Makes about 1 ½ cups.
