Place the onion, garlic and red pepper in a food processor and finely chop.
Combine with all the other ingredients, mixing very well.
Pat firmly into a microwave loaf pan or ring mould.
Place on a rack in the microwave. Cover with a paper towel. Cook on half (50%) power for 6 minutes. Stand for 6 minutes, then continue cooking on half power for another 6 minutes. Stand for 6 minutes. Drain off the liquid before slicing thinly to serve.
Combine the ingredients for the sauce and heat through in the microwave. Serve over the sliced meat loaf. Excellent topped with chopped coriander and avocado accompanied by corn chips. Serves 8.
