Salmon with Orange & Nutmeg Sauce

Groper (hapuku) is also great cooked this way.

 

 

1 orange
4 salmon steaks or fillets, about 600g
1 tablespoon olive oil
1/8 teaspoon nutmeg
salt and with pepper to taste

 

 

Finely grate the rind from the orange. Squeeze to obtain a 1/4 cup of orange juice.

 

 

Place the salmon in a single layer in a shallow microwave dish. Combine the orange juice with the oil, nutmeg and seasonings. Drizzle over the salmon.

 

Cover and cook on high (100%) power for 3-5 minutes, or until the fish can be flaked easily with a fork. Stand, covered for 2-3 minutes before serving. Spoon the cooking juices over the fish. Garnish with the orange rind.

 

Serves 4.
